COLOMBIA EDIER PERDOMO
This special coffee from Edier Perdomo was born through the Pink Bourbon Creation project.
Pink Bourbon, so called due to its cherries distinct pink hue and the initial belief that it was a cross between yellow and red bourbon, is a unique variety which has been thrust into the specialty coffee spotlight in recent years. Still being somewhat of a mystery, Pink Bourbon has been undergoing scientific research and is now understood to in fact be closer genetically to Ethiopian landrace varieties, despite being discovered in Colombia. Characteristics include a delicate, floral, sweet, complex flavour profile and cup qualities which will rival even the finest Gesha!
Edier's coffee undergoes a 24-hour pre-fermentation in cherry, followed by a 36-hour anaerobic fermentation in bags, enhancing their unique flavor profile. The drying process takes place on raised beds for 15 days, ensuring optimal moisture levels. This semi-washed process results in a vibrant and complex flavor profile with notes of HIbiscus, Appletiser and Honey.
