Presenting our Rise + Rest Coffee Duo

We're excited to launch an exceptional coffee duo - Rise + Rest.

This coffee duo features one coffee, a Pink Bourbon coffee from Juan Camillo Castiblanco of the El Carmen cooperative in El Pedregal, Huila, Colombia. The coffee has undergone a unique process called Camionetta Anoxic Natural processing. The difference between the two coffees is the caffeine content. 'Rest' has undergone decaffeination of its 'Rise' counterpart. 

Rise boasts notes of apple liqueur, candy and papaya while Rest offers notes of dried pineapple, chamomile and petit filou.

Importantly - Rest is a decaf coffee! That means you can enjoy a cup or two in the afternoon and evening without worrying about caffeine disrupting your sleep. 

We were brainstorming a name to encompass these two coffees and Ruairí, our resident wordsmith, came up with Rise and Rest. Not only is this an obvious reference to the caffeine hit from Rise, and the decaf cosy vibes of Rest, but it also cleverly references two important coffee processes. 

Rise: a term used in coffee roasting, referring to temperature control in the roasting process, the speed of the roast and the rate of temperature increase - 'rate of rise'. Coffee roasting is a precise science, carefully controlled by our expert roasters to profile or create a recipe for each coffee and then emulate and tweak for flavour consistency in each batch roasted thereafter.

Rest: A reference to the resting process that coffee undergoes after roasting. Once roasted, coffee should rest for a period of time to allow it to de-gas. Carbon dioxide is a byproduct of roasting, coffee beans expel gas immediately after roasting and this can create uneven extractions when brewing coffee. Pockets of gas are further released when coffee is ground and when water is in contact with the freshly ground coffee. Without resting, or degassing, bubbles would form during extraction, stopping the water passing through the coffee grounds. Rested coffee is particularly preferred for better control of espresso brewing, as a finer grind and a faster extraction are required.
