At The Gilchrist Café, sustainability isn’t an add-on — it’s central to everything we do. In partnership with Dear Green, we’re aiming to become the most environmentally responsible café on the University of Glasgow campus.
That means cutting down on waste, sourcing ingredients locally, composting responsibly, and tracking our carbon output.
With support from the university’s sustainability teams — and from you — we’re setting clear reduction targets, phasing out single-use items, and promoting reusable cup solutions.
By choosing The Gilchrist, you’re not just enjoying great coffee. You’re backing a café model that puts climate action first.
BREWED WITH PURPOSE
Dear Green has pioneered freshly roasted specialty-grade coffee right here in Glasgow, aka the ‘Dear Green Place’, since 2011.
Every batch is carefully selected and then roasted with precision to bring out the best in each bean’s flavour profile. We’re proud to be women-led, B Corp, organic certified, and the Roaster of the Year 2025.
For us, coffee is not only about flavour. It’s about responsibility.
From ethical sourcing to innovative solutions for sustainable practices. We focus on quality without compromise.
This is coffee that comes from a good place.
We’re committed to sourcing exceptional coffee that’s not only high-quality but ethically produced. That means working with certified farms, cooperatives, and minority-led producers, while also supporting climate-smart agriculture and strengthening social infrastructure in coffee-growing regions.
Our impact goes beyond sourcing — we maintain long-term partnerships through repeat purchasing, and we actively support global research and sustainability efforts, including World Coffee Research and 1% for the Planet.
This isn’t just ethical coffee. It’s a supply chain built on respect — for people, for the planet, and for the future of coffee.
