We’re on our way to the London Coffee Festival 2026, one of our favourite coffee festivals (we’re sure you can guess our favourite) in the UK London Coffee Festival is packed to the rafters with some of the best coffee and coffee talent from around the world.
As well as soaking in the festival atmosphere, we’ll be making a guest appearance at La Marzocco’s True Artisan Cafe, La Marzocco’s travelling guest bar setup. Glasgow Coffee Festival visitors will know that TAC is one of the best places to get a brew.
Because of this, we had to bring our A-Game, in this case, our Aerocano Game! But what is an Aerocano? And what is Las Lajas? Find the answer to these questions, and how to make your own, below!
What is an Aerocano?
An aerocano is a modern take on an iced espresso. With the use of a steaming wand, the espresso is gently aerated over ice to create a nitro cold brew-like texture. Frothy, light and delicious, we’ve decided to put our own twist on this delightful drink!
SHOWCASE #04: Las Lajas
Coming to you from Las Lajas Micromill in the central valley region of Costa Rica, Las Lajas farm is one of our latest editions of SHOWCASE coffee.

Grown in high-elevation volcanic soil, this fruity, boozy coffee is the perfect choice for our decadent aerocano, thanks to its notes of cherry, wine and red fruit.

Aerocano Recipe
Ingredients

30 grams of tonic

20g orange and rosemary syrup

Double-shot espresso coffee. If you didn’t manage to get your hands on Showcase #04 Timor Leste Rotutu Natural or Uganda Bukonzo Natural- the fruitier the better!

Garnish with dehydrated orange and a sprig of rosemary

Ice cubes

Espresso machine
Method

First, make your double espresso shot.

Then, simply add a few ice cubes to the pitcher along with your double-shot espresso. Aerate with the steam wand for 5-10 seconds. Congratulations, you’ve made your aerocano!

Now it’s time to assemble your drink! Add some ice cubes to a glass, then add your tonic and syrup, and top with your aerocano. Stir with a spoon, and then top with your dehydrated orange and sprig of rosemary.
