Situated in the western part of Letefoho, Rotutu is the flagship group with whom Karst were first introduced. They instantly recognised the potential of East Timorese coffee and entered into a partnership with the community to elevate their coffee quality in order to open new opportunities in international markets, and ultimately maximise their earning potential. After 2 years of research and at the request of the community, the Rotutu processing facility was built and a cherry purchasing model was implemented whereby the purchase price has continued to increase year on year at an average of 30% above the local commercial price.
Many farmers choose to process their coffee independently and sell parchment, preferring to receive a lump-sum payment at the end of the harvest. However, many members can’t commit the time to processing coffee and prefer to sell their cherries instead. This highlights the reason that Karst has a two-tier purchasing system, giving farmers the autonomy to choose how they sell their coffee with consideration to their culture which remains at the heart of daily life.
What makes East Timorese coffee so special? First and foremost, it’s the people and their unique relationship with their surrounding environment. Although the East Timorese identify as Catholic (brought to the island during Portuguese colonisation), traditional animistic beliefs are still widely practiced and this sets the tone for our partner farmers' relationships with ‘natureza’ (Mother Nature) and the importance of respecting the land where their coffee comes from.

Tips
All our coffee beans are roasted fresh and are best consumed within 6 weeks of roast date. Always reseal in our airtight bag and store at ambient temperature.

This is one of my favourite coffees and this roasting hits all the right notes. Slightly acid initially followed by warm sweetness; perfect. It brews equally well as espresso, americano or cappucino.
