This Brazilian coffee comes from Fazenda Santo Antonio in Espírito Santo do Pinhal, part of the celebrated Mogiana region, known for producing some of Brazil’s most consistent and refined specialty coffees.
Grown by Patricia Coelho, a third-generation producer, this coffee represents a new chapter for the family farm. In recent years, Patricia and her son Pedro have focused on quality-driven experimentation, pushing beyond traditional Brazilian profiles to create coffees with greater depth and character.
This Volcanic Fermentation Mundo Novo is an experimental microlot from the 2025 harvest. During volcanic fermentation cherries are piled into pyramids with the skin still on, those in the centre of the pyramids beginning to macerate. The pyramids are rotated and re-piled to allow uniform drying. This is a labour-intensive process, requiring regular checking and hand-rotating, piling in the pyramid form then flattening and repeating. The work proves to be worth it however, creating a distinct flavour profile. Locally, this method is known as volcanic fermentation due to the cherries’ cone shape when piled up, however it has nothing to do with actual volcanoes.
We sourced this coffee through Bossa Coffee Co, working closely with local exporter Costa Cafe, where the coffee is processed just a short distance from the farm. Dear Green first met Patricia, her family and the Costa team during an origin trip to Brazil in 2024, visiting the farm, sharing breakfast together and seeing the full journey from tree to mill. The connection of producer, exporter, importer and roaster all working closely together is what makes this coffee especially meaningful for us to share.
