Colombia - Jairo Arcila - Ice Natural

Cacao, Wild Strawberry, Pedro Ximenez

Jairo Arcila is a third-generation coffee grower, and after working as a mill manager for 40 years he bought his first farm. He was very curious about coffee growing and quickly managed to increase his coffee production by 25%. 

Jairo founded Cofinet with his two sons, Carlos and Felipe - with the sons running the company, Jairo focuses more on growing coffee and experimenting with processing methods, and he developed the relatively new experimental ice fermentation. 

The pink bourbon variety is a hybrid between red and yellow bourbon, a very rare and coveted coffee. It is known for its bright, floral flavour that also packs a fruity punch.


PROCESS METHOD
1 - Dry aerobic fermentation for 24 hours. The fermentation starts as soon as the coffee is picked, due to the presence of water, sugar, bacteria and yeast.
2 - The coffee is then placed into grainpro bags for 50 hours, maintaining a temperature below 22 °C while fermentation continues.
3 - Then the coffee is frozen for 72 hours.
4 - The coffee then gets placed on raised beds below 35 °C to thaw and dry until the ideal moisture content is achieved.

TIPS
All our coffee beans are roasted fresh and are best consumed within 6 weeks of roast date. Always reseal in our airtight bag and store at ambient temperature.
